Calling All Coco-health-nuts!


Here ye, Here ye, calling all coco-health-nuts!  If you are gluten free, vegan, or just religiously following the inspiring words of Dr. William Davis’, Wheat Belly, we want you…to try our new delicious creation.  There is no secret to the fact that there has been an increasing shift to healthier eating and foods.  After all, we are in a time where we have almost unlimited resources to information and networks that let us spread awareness about these issues like wild fire.  With all this information, people now have a better understanding of gluten intolerance, allergies, etc.  According to Technomic’s 2015 Food Trends, we, like the restaurants, want to cater to the “DIY Health” conscious person, especially during National Nutrition Awareness Month. This healthier treat is perfect for people who have Celiac disease, a gluten-free or low carb diet, dairy intolerance, or simply just desiring healthier or more beneficial substitutes.

We have found that using coconut products such as oil, flour, milk, and water are a great way to infuse and amplify flavor, as well as, get the healthy benefits that we are looking for.  After poking around a bit in the aforementioned resources, I found a great list made by Eating Well of some of the benefits found in the coconut products that we used in our tartlets.

Caramel Coconut Chocolate tartlets (Vegan & Gluten Free)

Tart Crust:

-1 cup coconut flour

-2T Cocoa Powder

-5T coconut oil (melted)

-4T maple syrup

-pinch of salt

To make crust: Combine all above ingredients together in a mixer until well combined. In a mini muffin pan (well greased), press dough into cavities to form tartlet cups


Caramel Coconut Filling:

-13oz (1 can) Coconut Milk

-1/2C honey

-pinch of salt

-1T coconut oil (melted)

-1T Vanilla extract

-1/2C shredded coconut


To make caramel: Combine coconut milk, honey & salt in a medium saucepan.  Over medium heat bring it to a boil & reduce to a simmer (low heat).  Continue to simmer, stirring occasionally to ensure the bottom isn’t burning, until caramel has thickened & is dark in color. (takes approx. 30-40 minutes). Once a nice darkened color, remove from heat & stir in coconut oil, vanilla & shredded coconut. Add filling to cups (fill to almost top).  Top with chocolate chips & coconut flakes. Bake in oven at 300F for 10-12 minutes.
